Searcy (LP) Who doesn’t love cinnamon rolls? They are ooey, gooey, and just the best comfort food. This recipe is so easy and delicious, it will fill your craving in no time. The only downside is that you have to watch the cookies like a hawk to make sure they will not brown. When you’re finished, store the cookies in a container and refrigerate. These cookies are even better heated up after they are chilled. These cookies go great with coffee, dipping them will give them an extra flavor.
Batter
- ¾ cup (1½ sticks) butter, softened
- ¾ cup granulated sugar
- ¼ cup powdered sugar
- 2 large eggs
- 1 teaspoon vanilla
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
Filling
- 6 tablespoons butter, softened
- 1 cup packed light brown sugar
- 1 teaspoon cinnamon
Glaze
- 4 ounces cream cheese, softened to room temperature
- ½ cup powdered sugar
- 1 teaspoon vanilla
- 2 tablespoons milk
Instructions
Cream the ¾ cup butter, sugar and powdered sugar until it is light and fluffy. Add the eggs and vanilla;mix well. Add the flour, baking powder and salt until just combined. Press down into a bowl and top with saran wrap. Refrigerate for at least an hour. To assemble the cookies: Preheat oven to 350 degrees. Cut dough into four pieces. Roll out the first piece into a large rectangle, about ¼ inch thick. Spread 1½ tablespoons of butter over it, then add 4 tablespoons of brown sugar, and sprinkle ¼ teaspoon cinnamon. Roll it up like you would a cinnamon roll. Using a sharp knife, cut the log into discs. Bake for 7-9 minutes, you want these cookies to stay blond, so watch close.
Mix the glaze ingredients, and pour into a plastic bag. Snip a tiny bit off one edge of the bag and pipe a zigzag pattern on the cookies. Let the icing dry. Refrigerate your cookies when you are finished with them. Enjoy!
